WIC Recipes

I hear from many women who are enrolled in WIC (Women, Infants and Children) that they would like to find better ways to use their food from the program. So, we would like to start posting recipes every once in a while that utilize these foods. If you have a great recipe that uses WIC items- feel free to share! This first recipe is one of my favorite comfort food meals and I make it for lunch on a regular basis (My husband doesn’t like tuna so we eat it when he’s not around 🙂 )

Creamed Tuna and Peas (over toast or rice)
This is a simple, quick meal which you can find lots of variations of but the recipe I use is from www.hillbillyhousewife.com and is as follows:

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 15 oz can peas
  • 6 oz can tuna
  • Melt the butter in a 2qt. saucepan then whisk in the flour, making sure it is smooth. Then slowly whisk in the milk making sure to stir out any lumps. When the mixture is completely smooth, stir in the sugar, salt and pepper. Cook and stir the sauce until it begins to boil. Allow it to boil for a full minute by the clock then remove the sauce from the heat.
  • Drain the peas and the tuna then stir in gently and reheat only until boiling again. Do not overcook or the peas will get mushy.
  • Serve over buttered toast or rice.

Depending on the coupons you have- the tuna, milk, peas, bread and rice are all covered by WIC.
